This can be done manually of course, by using Masking Tools like the Magic Wand or the Freehand masking tool, but some images present some hard-to-overcome challenges with semi-transparent areas that have lots of fine details. As you can see, the edges around this giraffe are well defined in most areas, but the mane and some of the fine hairs on its lower lip would be very difficult and time-consuming to select manually.
